What is Black Garlic?
Black Garlic is produced by fermentation of regular white garlic. Fermentation is done under controlled temperature and humidity without any additives or preservatives for 60 to 90 days. Natural sugars and amino acids in white garlic are then turned into melanoidin which gives the black colour of the garlic. During fermentation, the ingredients and taste of the white garlic also changed. The pungent smell and strong taste is gone. It now has a sweet and sour flavour, similar to dried fruit, smoky and slightly chewy, but the benefits remain and even more.
Characteristics of Black Garlic
Water-Soluble Compounds - Aged Black Garlic has higher concentration of water-soluble organo-sulfur substances, including S-allylcysteine (SAC) and other sulfur amino acids. These compounds can be easily absorbed by human bodies. S-allylcysteine has been studied for its cancer preventive properties as well as its ability to lower cholesterol.
Lipid-Soluble Compounds - Aged Black Garlic also contains Lipid-soluble organo-sulfur compounds such as diallyl sulfide (DAS), triallyl sulfide, diallyl disulfide and diallyl polysulfides. These inhibit cholesterol synthesis and lower cholesterol levels in human bodies.
Non-Sulfur Compounds - Aged Black Garlic also contains Non-sulfur compounds including proteins, carbohydrates and saponins. Saponins is helpful in bacterial and fungal infections within the human body.
Antioxidants - Aged Black Garlic is loaded with nearly twice as many disease-fighting antioxidants than fresh garlic. The aged Black Garlic can help prevent and control oxidative stress, a precursor to aging and a cause of several other degenerative conditions. It may lower the risk of cancer, cardiovascular disease and Alzheimer’s disease.
No Pungent Odor – The pungent smell and strong taste is gone. It now has a sweet and sour flavour, similar to dried fruit, smoky and slightly chewy, but the benefits remain and even more
Constituents of Black Garlic
Nutrition Content - Water, protein, fat, carbohydrate, food fibre, vitamin B1
Mineral Content - Sodium, potassium, magnesium, calcium, iron, zinc
Amino Acid content – 18
Isoleucine - it is needed for the formation of hemoglobin as well as assisting with regulation of blood sugar levels as well as energy levels. It is also involved in blood-clot formation.
Leucine - Leucine helps with the regulation of blood-sugar levels, the growth and repair of muscle tissue (such as bones, skin and muscles), growth hormone production, wound healing as well as energy regulation.
Lysine - It is required for growth and bone development in children, assists in calcium absorption. It is needed to produce antibodies, hormones, enzymes, collagen formation as well as repair of tissue.
Methionine - It prevents the build-up of fat in the arteries, and removes heavy metals from the body. It is also a great antioxidant to inactivate free radicals. It may also be used to treat depression, arthritis pain as well as chronic liver disease – although these claims are still under investigation.
Histidine - It is needed for growth and for the repair of tissue, as well as the maintenance of the myelin sheaths that act as protector for nerve cells. It is also required for the manufacture of both red and white blood cells, and helps to protect the body from damage caused by radiation and in removing heavy metals from the body.
Phenylalanine - can help depression, attention deficit-hyperactivity disorder (ADHD), Parkinson’s disease, chronic pain, osteoarthritis, rheumatoid arthritis, and a skin disease called vitiligo.
Tryptophan -Because of its ability to raise serotonin levels, is thought to help insomnia, depression, and anxiety.
Valine -It is needed for muscle metabolism, repair and growth of tissue and maintaining the nitrogen balance in the body.
Arginine -Arginine plays an important role in cell division, the healing of wounds, removing ammonia from the body, immune function, and the release of hormones
Alanine - Help produce lymphocytes, which are cells in your lymph fluid and bloodstream that are vital to your immune system. Help regulate blood sugar. Help reduce symptoms of prostate enlargement in men. Help your adrenal gland function.
Aspartic Acid – required for stamina, brain and neural health. Remove excess ammonia and other toxins from the bloodstream. It is also very important in the functioning of RNA, DNA, as well as the production of immunoglobulin and antibody synthesis.
Glutamic Acid – Help reduce fatigue and speed recovery by detoxifying muscle cells, enhance brain functioning, an important excitatory neurotransmitter. also important in the metabolism of sugars and fats. may play a role in the normal function of the prostate.
Glycine – It is required for synthesis of nucleic acids, the construction of RNA as well as DNA, bile acids and other amino acids in the body. Aid the absorption of calcium in the body. It helps in retarding degeneration of muscles. It is Important in prostate health. Also function as an inhibitory neurotransmitter.
Proline - blood flow can improve, effectively lowering your blood pressure by releasing cholesterol from the walls of your arteries. Protect muscle tissue from breakdown, essential in the formation of collagen.
Threonine - is an essential amino acid as it is not manufactured in our body and is found in high concentrations in the heart, skeletal muscles and central nervous system. It must be provided through food to our body. Threonine helps to maintain the proper protein balance in the body. It is important for the formation of many proteins and tooth enamel, collagen, and elastrin. It metabolizes fat and prevents the buildup of fat in the liver, and is useful with intestinal disorders, and indigestion.
Serine – Serine is needed for the proper metabolism of fats and fatty acids, the growth of muscle, and the maintenance of a healthy immune system. It is important in RNA and DNA function, cell membrane formation, and creatine synthesis. It also aids in the production of immunoglobulins and antibodies.
Tyrosine - it is helpful in suppressing the appetite and reducing body fat, production of skin and hair pigment, the proper functioning of the thyroid as well as the pituitary and adrenal gland. It is used for stress reduction and may be beneficial in narcolepsy, fatigue, anxiety, depression, allergies, and headaches.
Systine – powerful antioxidants to slow down aging, helpful in treating rheumatoid arthritis and hardening of arteries, promote burning of fat and building of muscles. Helpful in the healing of burns and wounds, breaking down mucus deposits in illnesses such as bronchitis as well as cystic fibrosis. It increases the level of glutathione in the lungs, liver, kidneys and bone marrow, and this may have an anti-aging effect on the body by reducing age-spots etc.
